What exactly is a Whoopie pie? Is it a cake, cookie, pie or sandwich? That’s up for debate, but I think we can all agree that Whoopie Pies are absolutely delicious. This homemade Whoopie Pies recipe was inspired by my favorite Girl Scouts cookie, the Caramel DeLite (Samoas).
My recipe has four different components: toasted coconut, dark chocolate cake, coconut Italian meringue, and lightly salted caramel. Everything is made from scratch.
Sound like too much work? It’s really not. Each component is easy to prepare and a little planning and ingredient gathering ahead of time makes the process a snap.
If you use a #10 scoop this recipe will make 4 completed Whoopie Pies.
